- Spaghetti or Soba noodles
- Peanuts - 1 cup
- Peanut Butter - 4 tablespoons
- Onions - 1 chopped
- Garlic - 1 clove minced
- Red bell peppers - 1 julienned
- Carrots - 1 julienned
- Peas - 1 cup
- Salt - to taste
- Pepper - to taste
- Peanut butter - 2 tablespoons
- Chilly Oil - 1 teaspoon (for mild)
- Soy Sauce - 4 tablespoons
- Cooking oil - 2 tablespoons
1. Boil Noodles with little salt.
2. Warm peanut butter, mix with soy sauce and chilly oil. Set aside.
3. In separate pan add cooking oil and saute the peanuts.
4. Add in the onions, garlic and bell peppers and toss around. If you are looking for a spicy dish, add some chopped green chilies at this step here too.
5. Add all the other veggies and cook till they are just done and crispy.
6. Toss the veggies, noodles and sauce together.
7. Serve warm or cold and enjoy!
